About Sushi Noz

You find the entrance before you find the restaurant: a slatted wooden gate off a quiet Upper East Side block, then a short courtyard walk that does the work of clearing your head before you sit down. Inside, nine seats face a single hinoki counter where Nozomu Abe works in near silence, his knife doing most of the talking. This is Edo-style sushi — fish cured, aged, or lightly cooked before it reaches you, never simply sliced and served raw for shock value. Kohada is pressed and vinegared until its silver skin tightens like a drum; tuna arrives in three ages, each one a different argument about umami. The rice is seasoned warm, packed loose, gone in a bite. Nothing here is plated for a camera; it's plated for the eleven seconds you have before the temperature changes.
