Aquavit's dining room drops you two stories below street level into a birch-lined atrium built around a slender waterfall, but the real architecture is on the plate. Chef Emma Bengtsson — one of a handful of women in the US to hold Two MICHELIN Stars — runs a kitchen fixated on restraint: cured and smoked fish worked with Nordic technique rather than Nordic cliché, rye and buckwheat standing in for cream and butter, dill and juniper used like punctuation rather than flavor. The restaurant traces its lineage to 1987, and three decades on it still treats Scandinavian food as a serious, evolving cuisine rather than a theme. Precise, restrained cooking that trusts the ingredients more than most Michelin rooms I've been to. Pacing slowed in the middle courses but the aquavit pairing more than made up for it.
