Housed in a château-style villa on the edge of Ebisu Garden Place, Gastronomy Joël Robuchon has carried three MICHELIN Stars since 2008, longer than almost any other dining room in the city. Chef Kenichiro Sekiya, who trained directly under Robuchon before his passing, now runs the kitchen with the same doctrine: reduce every dish to its essential technique, then execute that technique without error. The pommes purée alone — worked through a tamis on a ratio of butter to potato that the kitchen has never disclosed — remains the reason regulars book a table a season out.
