Chef Kenichiro Sekiya, who trained directly under Robuchon before his passing, now runs the kitchen with the same doctrine: reduce every dish to its essential technique, then execute that technique without error. The pommes purée alone — worked through a tamis on a ratio of butter to potato that the kitchen has never disclosed — remains the reason regulars book a table a season out.
