About Central

Central is a research project that happens to feed you beautifully. Virgilio Martínez and Pía León organize the menu by Peruvian ecosystems and altitude, moving through Pacific coast, Andes, Amazon, high lakes, tubers, cacao, algae, and unfamiliar herbs without turning the meal into a lecture. The Barranco complex gives the restaurant the scale of an institution, but the plates often feel surprisingly intimate, especially when a rare ingredient is treated simply. There is no Michelin guide in Peru; Central's reputation was built on a much wider world stage.
