Humble Chicken runs its entire two-Michelin-Star reputation through a single ceramic-lined konro grill, twelve counter seats deep in a Soho basement. The kitchen breaks down whole birds in-house and works every part of the animal across a fixed omakase, alongside sashimi courses and rice dishes pulled from a wider East Asian repertoire — Korean and Southeast Asian notes surface between the classic tare-glazed skewers. Char comes from binchotan, timed to the second, so skin renders to shatter while the meat underneath stays barely set. Nothing on the counter is described twice; each course arrives, gets explained in a sentence, and disappears.
